320mm oversized rotors

I have ordered calipers (with custom bracket) that fit only 320mm rotors.
Is somebody aware where i could get oversized rotors for my gpz 750 1982?

Your best bet would be from the place that you got the calipers and brackets from.
I would imagine that they would also sell the discs to use with their oversize brake kits.
It would probably be wisest to get the disc from the person that you got the "kit" from.
There are a lot of mfg's that have 320mm discs. Most of them have different offsets than the others and "stumbling" across an exact fitting disc would be "wishful thinking".
I haven't found a bolt on 4 bolt brake disc in 320mm that will bolt directly on to the KZ wheel. The discs usually need to be modified to fit the application that I am putting them on.
I believe that EBC will custom make a disc for you.

My original calipers are FUBAR (cracked).
Since i have access to a waterjet cutting machine i'll be designing my own brackets.
That's why i'm asking where you get these rotors?

It would probably be best to get some custom made discs through EBC. Most motorcycle shops can get them.
When I get discs for my kits, what they are and what they fit doesn't really matter much. What matters the most is " Can I modify them to fit what I am working on ?". All of my kits come with modified discs(discs that were modified to fit a particular application and will ONLY fit that particular application).
I am not aware of a bolt on 320mm disc for the KZ wheel. Custom made may be your only option. There are very few 4 bolt brake disc made for the KZ and they are usually OEM style replacements(Stock size).

If you are custom making a hub, you can have it made to work with any brake disc you want.
Another JMO,
If you are making a hub, I can't see the advantage of making a (dimensionally) identical hub to one that is already offered (stock KZ). Custom make a hub to work with a disc and factor in the (disc)offset in the fabrication of the hub.
The old (KZ) discs are what are considered wide band rotors. They use the height of the brake pad to contact the "wide band" of the rotors. The newer discs are considered narrow band rotors. The use the width (front to rear)of the brake pads to contact the rotor.
Using a narrow band disc(newer disc) with a wide band (stock KZ) caliper usually have the brake pad contacting the buttons on the rotors. I would strongly advise against cutting the brake pads for clearance (they may contact the buttons when the pad wears down). I have seen 1 person do it on the CB 750 message board, and(a 3rd JMO) is a disaster waiting to happen.
