Does this mean simply needing a method to support the rear tire off the ground without using a center stand??

If it was the piston and you made it move after removing the caliper from the bracket and now the piston will not go back in far enough to remount the caliper, then I'd bet that crud is causing the problem. Did you remove the piston completely and carefully clean the parts and replace the seals? If not, that really needs to be done. A complete fluid replacement will also be needed.
If the caliper was seized to the bracket, then the caliper needs to be completely separated from the bracket and all the offending corrosion needs to be removed and some brake system approved grease needs to be sparingly applied to the sliding surfaces before reassembly.

+1 on removing the brake line. You may also try opening the bleeder valve. I had to do this on my 750 when I first got it, and the bleeder valve released the pressure and allowed the piston to move back into the caliper so I could remove it to rebuild.

Also while it doesn't apply to the KZ's, you don't want to send Muck into a Anti-lock Valve block, the solenoid valves may not like it.
