I'm looking to fit my '79 750 Twin with some stickier tires but the 19" front is limiting my options. I did find Metzeler lasertec in a 3.25H19 which is billed as a Sport Touring tire, but I'm wanting real Sport rubber.

Pirelli Sport Demon is the yardstick for sticky tires. 
Avon Roadriders are excellent too.  Look for the MK II version, since they are the current model.  

I helped a friend install Lasertec tires on his bike and they checked/cracked very badly after only a year or so.  They are expensive too.  I don't recommend them for those reasons.

Dunlop TT100's take some beating for all weather use and were the tyre of choice "back in the day" originally developed for Isle of Man racing

We have Avon Roadrider II's on 8 of our 13 bikes. We have them on small and big bikes with no complaints. I had to put Dunlop 404's on the KZ 1000 LTD because the Avon's were out of stock.

Johnny's Vintage Motorcycles in Wadsworth, OH always seems to be pushing the Kenda Retro Active tire.

Roadrider 2's on all my Z's.
Best I've found in 40+  years of looking n trying. 
Just out of interest Warren have you tried "TT100's" (my old CB250T would deck the main stand on left handers in the wet without letting go) These were the first road legal tyre to achieve a 100MPH lap at the TT (hence the name)

Not recently Guy, they were the go to boots in the 70's as I recall. I don't recall any real issues with them other than maybe being a bit firm, as in hard rubber, although they do have a good "retro" tread pattern. Just thinking things have evolved since then but don't know if TT's have evolved with the times or are they still the same as the 70's ones?
I guess it's just down to what gives you confidence.

Another vote for the Avon Roadriders. I have them on my cafe bike and will be using them on my GPz (If I ever put it all back together).
