The more I've worked on my GPz 550 the more I've decided I want to do a full restoration on the bike over the winter, fully powder coat the frame, the works. Given that my gauges are not quite working (speedometer starts bouncing at 70 mph, and tach starts bouncing at 6k rpm) I've decided to get them properly serviced, but I figured I would ask before I went ahead and did that, did the UK or any other countries get an mph speedometer that didn't top out at 85 mph? I'd be interested in a speedometer with a bit more range as NJ highways pretty regularly get up above 85 mph.

Pretty much every other country except usa got speedos that read higher than 85mph.

including Canada but those will be kph. the UK should be mph. not for a gpz but I've seen one used 750-Ltd-4 150 mph out of the UK.  again, not for a gpz but over the years I've seen one nos Canada spec 240 kph speedometer for my motorcycle on ebbay. in the parts diagrams often times Canada parts are denoted w a CN.

If you feel like taking the speedo apart, it can be changed, this is a ND unit, side shaft reset, late 70’s honda units from 650-750’s are also ND’s, with side shaft reset, hondas at this time were 140mph, internal units are the same, except for gear ratios, they can be swapped,pics below
blue dial is honda, I got a black dial from retro in WA. the honda reset shaft comes out, the kaw doesn’t but knob comes off, was just experimenting to see if this would work, and quite accurate, checked with gps speedo,(black box between speedo and tach) 
or you can just swap out to gps speedo and electronic tach, they are all over ebay and amazon, will need to adapt brackets,
