Forget using the KZ750 top triple clamp on the GPz750 forks, the KZ750 is 36mm and the GPz is 37mm (83-85).
Get the handlebar holders off a 85 GPz750, they're about an inch taller than the 83 are.
Easily remedied by boring the diameter out a mil. Did it w/ some clip-ons from a Suzuki once for my "J".

How do you determine the maximum amount that can be removed while still maintaining the required strength?
That's why I never recommend that someone bore a triple clamp, I have no way of answering that question.

And remember 2mm of 'bore' is only 1mm worth of material (1mm in each direction).
