Hey Stuart, clean looking KZ you got man!!!! Wish mine looked half that good. Mine appears to have been rode hard and put up wet.
Wish I was in Scotland also. Best I can tell that is the Motherland for me and my ancestors since I come from a long line of Campbells originating from Scotland.
I live in Alabama, USA so its a pretty good little trip to your location. Plan to make the trip one day though for sure.
My KZ1000 is also a 77, with factory wire spoke rims, but it also has rear disc setup already on it and looks to be the factory set up. Hopefully, I can get some pics of my bike posted up on here in the very near future, but right now its apart due to carbs, rust in gas tank, and a new Paint Job on the tank and plastics upcoming.
I got to do something about the wire spoke wheels though, they are rusted and the chrome is already flaking off really badly. Dont think they can be salvaged. Thats why I was wanting input on how to go to the Mag wheels and what all is involved.

Sorry not to better answer the question, but here's an "option" from Redline:
redlinecycle.com/Mvc-041F%20Wheel%20Options.html
My PO put a slightly larger back tire on a 3.5 rim, so I am staying with spokes. My front is beyond hope, so I will find a used 76 KZ900 front spoke rim or go brand new from someone like Redlinecycle.
My front spokes have more rust than chrome.

I have the reverse problem as Highlander. I have mag wheels on my '77 and I am putting spoke wheels on it. Only problem is that some parts, mainly the collars, are different from mag to spoke. Highlander, I think you will have the same problem as me when you get the mags. I would be willing to swap the required parts with you if you are interested. If not, does anybody else have, or know where I can get these parts.
I require the following parts for rear spoke wheel parts PN's - 42032070 Rear Collar, 42036024 Sleeve, 42010030 Collar BRG, and for the front wheel 41039028 Collar BRG. I am desperate to get these parts ASAP and will make itvery worth while to anyone who can supply me with these.
See attached file of my baby below.

I may have all but the first one (42032070 Rear Collar), since I just checked and the KZ750B twin uses the same parts.
If you want to come here and dig through my parts till you find them, I'll give them to you

Thanks for all the advice guys. I think after I have digested all the differences, I am going to just try to find some replacement spoke rims and keep the bike as close to original as possible.
I think this will be a much easier option for me, and save a whole lot of conversion time.
Do they make a back spoke chrome rim that will hold a larger tire than stock, and will I need to go to a different swing arm to accomodate the larger width tire?

Count your spokes, should be 40 IIRC, then go to Ebay and search something like this: 18" rim 40
shop.ebay.com/Motorcycle-Parts-/10063/i....trksid=p3286.c0.m282
Or whatever rim diameter you're using.
