I'm assuming the rear sprockets on the middleweight KZs can interchange to some degree? Say, the 650, 750-4 and 750-2, do they all swap? Visually they look the same. As long as they are all 530 it should be a go?

No, they don't all swap, but several of them do.
Besides the fact that some of the 650s and 750s run 630 chain and sprockets you also need to consider ao the center hole diameter and the bolt circle diameter (BCD) for the rear sprocket and spline size and offset for the front sprocket.
Go here , and in the top search line select: Kawasaki, any type and your choice of engine capacity - this will bring up a list of models.
Select a model and you'll see diagrams of the front and rear sprockets including info about measurements, available sizes etc.

After following OnkelB's instructions, click on the part number and it will show you all the bikes that use that sprocket in the same chain size. It won't show you all the bikes that use the same bolt pattern but in a different chain size.
My 96 ZX11 has a 99 ZX9C rear wheel, and I bought near a half dozen rear sprockets (different tooth count) cheap on eBay by searching for KZ650 and KZ750 twin sprockets.
