what kind of grease or Lube should i use to lubricate the ball bearings in my stem on the triple tree assembly. Its a 78 kz200

As it is prone to get water around and in those, I would use a water proof grease. Brand and type probably not real important. Lube generously though, and be careful to get enough, but not to much pre-load. Are you replacing, and upgrading the bearings, so they have grease seals?

just putting my bike back together and i noticed that there is little to no grease in/on/around the steel ball bearings. factory specs did not have grease seals.

You might want to look at some tapered roller bearings in a kit, that would have seals. All Balls is one supplier. Check z1enterprises.com to see if they list a kit, or go straight to allballs.com
But I find the re-sellers cheaper than allballs web site.
