They each have different part numbers, so what's the difference? Length?

Could be a slight difference in the bend angle of the solid tube portions that fit into the throttle housing.
The differences allow clearance from one another when screwing into the housing.
If both were exactly the same, when attempting to screw in the second cable (after the first has already been screwed in) the second cable won't screw in because it's blocked by the cable that's already screwed in.
Tip -- if the throttle cable that's pulling open the carbs happens to break, the broken cable may be removed and replaced by the unbroken cable.
