You can buy some zinc spokes for about 1/2 what stainless spokes cost and they will still look good for years. Lacing isn't that big of a deal if you follow a couple guidelines. After you do one wheel you'll wonder why you didn't try it earlier.

If your bike is the 81 1000-K1 Ltd, then it came stock w cast alloy wheels, so assuming the front end is stock, you should be able to convert it back to the stock wheels.

I will post pictures here.I assumed the bike came with these wheels.They are are front and back, doesnt look like the bikes has been altered, but maybe it has.I might just try relacing, but the rustoff liquid will be first.

Tighten, true all the spokes.
Then powdercoat everything silver all at once.
I know a guy that does this. Junk rims, they look great afterward.
