looking to order some SS brake lines for my KZ,

The lengths may be listed in the parts diagrams. Kawasaki.com or Partzilla.
For my 81 650-csr the lengths listed are the same as the eye-to-eye measurements.

Is "eye-to-eye" the measurement typically used when determining and ordering lengths?

Stainless hoses are usually measured by the overall length of the assembly, including any fittings that are permanently attached. For example, if you get hoses that have -3AN female fittings on both ends the overall length is measured from the end of each fitting. You then have to account for the length of the banjo fittings to get the correct length for your bike. Some hoses can be ordered with the banjo fitting permanently attached.

You can also call some Hose & Equipment places & see if they'll make up some hoses for you
I just rode my bike to a hose & equipment place here in ILL., they measured & made them up while I waited
here's some places in your area
