It would be very inexpensive for you to pickup a 250/500 caliper and put it on your disc. Then you can figure out how much spacing is needed and maybe you can fabricate the part out of a piece of steel. Not an easy job but if you have a drill, grinder and some metric taps I bet it can be done.

That would be great! I would really need to know that the mounting bolt pattern on the rotor is. It doesn't look like clearance would be an issue diameter wise. I would take it if it fit. Thanks!
I have to get some pics of the kz200 setup on here so it's easier to understand what I'm dealing with.

Here is a look at the caliper mount position.
This is how the OEM brake mounts.
It's hard to tell by the picture, but with my eye it looked close to 2 3/8 inches (60.325mm). Measuring center to center.
Unfortunately, I can't get a measurement of the rotor bolt pattern tonight, but the rotor does measure 3/16th (4.7625mm) of an inch thick with a min of 4mm stamped on it.

Anyone know if it would it work on a the thinner rotor. I don't need to pull any stoppies, I just want to stop
