AS of right now cafe racer unless I start to feel guilty. The only scratch in the paint is on the right side panel and would be easy to fix.

That bike is clearly in too nice of shape to change from stock. It's your bike to do with as you please, but I respectfully suggest you clean it up, sell it at a profit, and use part of that $$ to buy a bike that's not so pretty since you will be changing its appearance anyway and use the $$ left over to pay for the mods. Ed

and welcome to the forum.
Too many messed up crap condition bikes out there to make very cool cafe's, bobbers, ratters etc to chop up a clean one.
IF you want a cafe, get that one running, sell it, use the proceeds buy basket case and the additional costs of fabrication parts etc.
