On one bike I can use a 20mm axle. That's a little bigger then 3/4". I can get some 1" axle spacers. Would that be too much clearance to use or is that really a concern? I realize you wouldn't want too much but what would constitute too much?

It should be easy to find 20mm spacers and mill then down to the thickness u need. lots of bikes use 20mm.
Pull up a parts pic ,of the 2001 zrx1200 rear wheel on bikebandit.com . u will see a couple. sometimes they have dimentions too.

part #92022: WASHER,23X32X2.3mm $3.64
This is not the right size ,this goes over the coller, but i'm sure u get the idea. i trimmed the collar down 2.5mm to move the rim over, and then had an alluminium shim made from bar stock to fit the oposite side.
lots of options.
